Cheesy Vegetable Soup
This is one of my favorite soups to eat for dinner. Everyone will be sure to love it! (Yes, even the picky eaters will like it!) The recipe originally came from a neighbor of mine and quickly became a family favorite. It’s great when paired with a side salad and some crusty bread for dipping. It’s also easy to make ahead of time and heat up, if you’re looking for a quick dinner idea. Simply just make the soup and store it in the refrigerator, then reheat the soup in a pot over medium heat until warmed through.

Cheesy Vegetable Soup

A rich cheesy vegetable soup. It's great when paired with a side salad and some crusty bread for dipping.

- To prepare, wash and chop the broccoli, cauliflower, onion, carrots, and celery. Cut the Velveeta into small cubes. Set aside until needed.
- In a large pot or Dutch oven, over medium heat, melt 1/2 cup butter (1 stick). Add the broccoli, cauliflower, onion, carrots, and celery. Sauté about 5 minutes. Add the chicken broth and simmer until tender, about 5 minutes.
- In another large pot, over medium heat, melt the remaining 1 cup butter (2 sticks). Stir in the flour, salt, and pepper and cook 2-3 minutes or until flour is cooked. Slowly pour in the milk and whisk to combine and to remove any clumps of flour. Stir in the cheese until melted and it begins to simmer. Pour the cheese sauce into the pot with the vegetables and stir to combine. Cook 45 minutes to 1 hour or until the vegetables are very soft.
