Chicken Salad Sandwiches
This is my favorite way to make chicken salad and how I make it every time. Although, I’ll admit, I rarely actually measure what I’m putting in it. It’s a great way to use leftover chicken, or you can use canned chicken if you don’t have any cooked on hand. It makes a quick, easy, and good tasting lunch. It can also be made ahead of time and stored in the refrigerator until you’re ready to use.

Chicken Salad Sandwiches

Classic chicken salad, made with mayo, celery, and onion.

Instructions
- In a medium bowl, add the chicken and shred if not already. To the same bowl add in the mayonnaise, celery, onion, celery seed, salt, and pepper. Mix until combined. Mix in more mayo until desired consistency is reached.
- Serve on slices of bread or inside a croissant, which has been sliced in half.
