Oat Crumble Apple Pie

Believe it or not, apple pie is not my favorite variety of pie. I would much prefer cherry or blueberry pie, but apple pie is the classic American pie which lots of people love, especially at this time of the year. This version has a classic apple filling with an oat crumb topping. It’s also a great fall pie to make when there are lots of fresh juicy apples available.

Prepare the Pie Filling
  1. Peel, core, and thinly slice the apples to about 3/8-inch thick. Place in a large mixing bowl. Add the lemon juice and stir until apples are all coated.
  2. To the bowl with the apples, add the vanilla, brown sugar, flour, cinnamon, nutmeg, allspice, cardamom, and salt. Toss altogether until all apples are coated. Cover tightly and place in the refrigerator until ready to use.
Prepare the Crumb Topping
  1. In a medium bowl, combine the brown sugar, flour, cinnamon, and butter. Using a pastry blender or forks blend together until small crumbs form. Add in the oats and lemon juice and mix together with a spoon until combined.
Assemble and Bake the Pie
  1. Preheat the oven to 375° F.
  2. If using homemade pie crust, lay the prepare pie crust onto a pie plate. Cut off any excess crust and flute the edges. Poke the bottom of the crust a few times with a fork to create small holes. If using a premade pie crust, remove it from the freezer.
  3. Stir the apple filling together one last time, then pour it into the pie crust. Dot the top of the apples with the 2 tablespoons of cold, cubed butter. Sprinkle the crumb mixture on top. Place pie plate on a rimmed baking sheet.
  4. Bake for 55-65 minutes, placing aluminum foil on the pie crust after 20 minutes. Pie should be hot and bubbly and apples should be tender when poked with a toothpick. Remove from the oven and allow the pie to cool completely before slicing.
