Apple Pie Oatmeal Cookies
Who says that cookies can only ben made during Christmastime? Not me! I like to make them all year long. This is the perfect cookie for the fall season. It includes all of the classic flavors of an apple pie in an oatmeal cookie. They’re great for snacking and sharing. They also freeze wonderfully! Just place baked cookies in sealable freezer bags and freeze. No one will even notice that they were from the freezer once they’re been defrosted.

Apple Pie Oatmeal Cookies
Cozy oatmeal cookies with a spicy apple pie twist. Made with real apples!
Ingredients
Instructions
- Preheat oven to 225° F.
- Peel, core, and dice the apples into 1/4-inch pieces. It will take about 2 apples, depending on the size of the apple. Place diced apples on a parchment lined baking sheet.
- Bake for 30 minutes, then toss the apples on the baking sheet. Bake for an additional 35 minutes until the apples are soft. Remove apples from the baking sheet and allow them to cool 10-15 minutes before using.
- In a medium bowl, whisk the flour, baking soda, salt, cinnamon, nutmeg, allspice, and cardamom together. Set aside until needed.
- In a large bowl, or the bowl of a stand mixer, cream the butter, brown sugar, and granulated sugar until light and fluffy. Add in the eggs, vanilla extract, and molasses. Beat until smooth and creamy.
- Mix in half of the dry ingredients until just combined, then mix in the remaining dry ingredients. If using a stand mixer, mix using the paddle attachment. If not, mix using a large mixing spoon.
- Add the oats and mix until combined. If using a stand mixer, mix using the paddle attachment. If not, mix using a large mixing spoon.
- Add the baked apples and nuts. Using a large spoon, mix until evenly incorporated. Chill the dough for 30-45 minutes.
- Scoop cookies, using a 1 and 1/2 tablespoon cookie scoop, onto parchment lined baking sheets. Bake for 9-11 minutes or until the edges start to slightly brown. Allow the cookies to sit on the baking sheet 5 minutes before removing to a wire cooling rack.

This recipe was tested using a 2.75-inch cookie scoop, which is equivalent to 1 and 1/2 tablespoons of cookie dough.
