This is my favorite chicken noodle soup. It’s quick and easy to make and tastes delicious. It’s also a warm and comforting soup to eat on a cold day or when you’re not feeling so well.

A comforting, quick, and easy chicken noodle soup.

- Cut the chicken breast into 1/2-inch pieces. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces. Cook until chicken is cooked through, about 5-7 minutes, stirring occasionally.
- Add the celery, carrots, onion, garlic, chicken broth, parsley, thyme, pepper, and the bay leaf to a large pot. Bring to a simmer over medium heat and simmer vegetables 15 minutes, stirring occasionally. Add the chicken. Bring to a boil over high heat, then reduce the heat to a gently boil. Add the noodles to the soup pot and cook until al dente about 10-15 minutes, stirring occasionally. Remove the bay leaf. Serve warm.
Notes
PARSLEY AND THYME
Dried herbs can be used in place of fresh herbs. 1 teaspoon of dried herbs equals 1 tablespoon of fresh.
