Easy Ham and Bean Soup

This is a popular soup eaten around where I live. It’s a good meal to make ahead of time and reheat, when you need a meal. It’s also fairly inexpensive to make and a great use of leftover ham. It can be made on the stovetop or in a slow-cooker, instructions for both are given below.

Ingredients

  1. In a large pot, add the water and beans. Bring to a boil over high heat. Remove from the heat and stir in the salt. Cover the pot and allow it to sit for 1 hour.
  2. To prepare, peel and chop the carrots and onion. Wash and chop the celery rib. Mince the garlic.
  3. Add the carrots, onion, celery, garlic, mustard powder, bay leaves, and liquid smoke to the large pot with the beans. Stir together and bring to a boil over high heat. Reduce heat to a simmer and simmer for 1 hour. Stir in the chopped ham and simmer until heated through, about 30 minutes. Lightly mash with a potato masher until creamy. Season with pepper. Serve warm.

Notes

SLOW-COOKER INSTRUCTIONS

Boil the beans as stated above. Combine the beans and remaining ingredients in the crock of a slow cooker and cook on high for 4 hours or low for 8 hours. Stir in the ham during the last 30 minutes. Mash with the potato masher and serve.

LIQUID SMOKE

Instead of liquid smoke, a ham bone can be used. Remove the ham bone before adding in the chopped ham.
