All-American Omelet
This is something that my dad would make for me all the time as a child. Of course, I never actually liked them when I was younger, so he just eventually stopped making them for me. But as I got older, I realized that they’re actually a tasty and filling breakfast option.
They can be filled with whatever filling you prefer, or simply just what you have on hand. The recipe below includes the fillings that my family typically includes. However, the ham and salami can be replaced with cooked and crumbled bacon, if that’s what you’d prefer. You can also try a filling of sautéd mushroom, ham, and Swiss cheese, if you’re looking for something a little different.

All-American Omelet
The classic All-American omelet, filled with onions, pepper, tomatoes, ham, salami, and cheese.

- In a small bowl, beat the eggs. Set aside until needed. Heat the bacon fat in a small pan over medium heat. Add the diced onion and bell pepper. Sauté until lightly browned, about 5 minutes, stirring occasionally. Add in the diced tomatoes, chopped ham, and chopped salami. Cook 1 minute longer, stirring occasionally. Remove from the pan and set aside until needed.
- Reduce the heat of the pan to medium-low. Add more bacon fat, if needed. Pour in the beaten egg. Season with salt, pepper, and garlic powder. Cook until the egg until almost cooked through, about 4-5 minutes, not stirring at all. Carefully loosen the edges of egg using a spatula, then carefully loosen the bottom of the egg. Using the spatula, carefully flip it over.
- Sprinkle the cheese over the entire surface of the egg. Sprinkle the prepared onion, pepper, tomato, ham, and salami mixture over half of the egg, leaving a thin border around the edge. Flip the empty half of the egg over the top of the filling and cook about 30 seconds more or until the cheese is melted. Serve immediately.
Notes
FILLING
The filling ingredients can be replaced with any desired filling. Try cooked and crumbled bacon, instead of the ham or salami. Omit the tomatoes, if not desired. About 1/2 cup total of prepared filling is needed.
