No-Bake Cheesecake Pie
This is a quick, delicious and easy-to-make pie great for any event. It can be topped with any desired toppings for added flavor. The pie pictured below was topped with fresh blueberries and made in a store-bought graham cracker crust. If you have graham crackers, you can also make a homemade graham cracker crust. I actually prefer the homemade kind, but the store-bough is what I had on hand and it needed to be used. But, hey, using a store-bought crust makes the pie process even quicker!

No-Bake Cheesecake Pie

A great easy summertime dessert. My no-bake cheesecake pie is a classic no-bake cheesecake filled inside of a graham cracker crust.

- In a large bowl, or the bowl of a stand mixer, whip the heavy whipping cream on high speed until stiff peaks form, about 3-4 minutes. Remove the whipped cream to a small bowl and set aside until needed.
- To the same large mixing bowl, beat the cream cheese on medium speed until smooth and creamy. Add in the sugar, sour cream, lemon juice, and vanilla extract. Beat until combined. Add in the whipped cream and fold, using a large spatula, until combined.
- Spoon the cheesecake filling into the prepared graham cracker crust and smooth the top using a spatula. Arrange fresh fruit or prepared pie filling on top of the pie. Serve cold. Store in the refrigerator.
