Sugar Free Strawberry Jam

Strawberry season is among us, at least here in Pennsylvania. And a great way to preserve your strawberries is by making strawberry jam. In any traditional Pennsylvania Dutch kitchen there are sure to be lots of canned “sweets and sours”. That meaning jams, jellies, pickled foods, and so on. So most often, we’re acquainted with the canner. (It’s an important part of the jam making and preserving process.)

Below I’ve shared a recipe for a sugar free strawberry jam. Let’s be clear, I grew up eating to sugar version of strawberry jam. But now that I’m grown up, and look at the sugar content of food, I’ve realized how much sugar is actually in that, so I’ve come up with a sugar free version.

A sugar free strawberry jam, made especially with the purpose of being canned.

Ingredients

Instructions

  1. Prepare canner, jars, and lids. See Note.
  2. Prepare you strawberries by hulling and crushing them, using a potato masher. Measure out exactly 8 cups of the prepared strawberries.
  3. In a large saucepan over high heat, combine the prepare strawberries, grape juice, and lemon juice. Add in pectin and butter. Stir together. Bring mixture to a full boil, stirring constantly. Boil for one minute. Remove from heat and skim foam, if necessary.
  4. Ladle hot jam into the hot jars, leaving a 1/4 inch headspace. Wipe the rim with a clean damp cloth, place the lid on the jar, and screw on the band.
  5. Place jars in the canner, completely covered in water. Bring to a boil and boil for 10 minutes. Turn off heat and remove the lid of the canner. Allow the jars to sit in the water 5 more minutes, then remove. Allow them to sit for a day, then check to make sure the lids have sealed properly.
